Chocolate Chip Cookie Recipe

My five year old had his first day at school for the year yesterday and I promised him that he’d have some homemade chocolate chip cookies in his lunchbox as a treat. So on Wednesday afternoon, my five year old, three year old, eighteen month old and I gathered around the kitchen table to take turns in measuring, pouring and stirring. It’s a fun moment together and they feel such a sense of achievement. The best part for me is to see their eyes light up as they take that first bite of the cookie while it’s still warm from the oven.

We use a trusty recipe from Marie Claire Cooking by Donna Hay; it’s easy and super quick to do even if you do it by hand like I do:

Chocolate Chip Cookies

125g (4 oz) butter, softened

½ teaspoon vanilla extract

1 cup brown sugar

1 egg

1 cup plain flour

1 cup self-raising flour

1 cup desiccated coconut

250g (8 oz) chopped chocolate

Place butter, vanilla extract and sugar in a bowl and beat until creamy. Beat egg into mixture and then stir through flours, coconut and chocolate. Roll 2 tablespoons of mixture at a time into balls, place balls on lined baking trays and flatten slightly. Bake in a preheated 190°C (375°F) oven for 15 minutes or until cookies are lightly browned. Cool on trays. Makes 20.

Happy baking and have a lovely weekend everyone – see you Monday!

@Genie – something simple like this and you can’t go wrong;)
@Catherine – he loves it. They actually start on their 5th bday here so he’s already done a term but after 8 weeks holiday, it was like 1st day again!
@Marie – thanks for being the guinea pig;)
